Microbrewery
Proudly built using 100% American steel and assembled by a small specialty manufacturer in Northern California, our 10-barrel brewhouse features a rotating selection of limited production and seasonal ales. The spent grain, or ‘mash’, leftover from the brewing process contains no alcohol and is used as nutritious feed for our livestock. Any leftovers are added to our biogas digester system to be converted into methane gas and liquid fertilizer.

Our Barrel Aging Program
Barrel aging isn’t just for wine and spirits, it can impart unique characteristics for beer too. Our brewmaster Andy carefully selects and sources the highest quality barrels to enhance the depth and complexity of our beers. With each sip, you'll taste notes of vanilla, caramel, and spice, along with the distinctive flavor of the barrel itself depending on its past life. Each of them are limited edition, one-of-a-kind beers.
Barrel Aged Doppelbock
This beer is available now in cans and kegs in very limited quantities. Adding a southwest twist to a traditionally brewed German Doppelbock, we added agave nectar in the boil kettle and decided to age this beer further in Mezcal barrels from Oaxaca and Sotol barrels from Texas. This beer has a rich, sweet malt character with a depth of flavor added from the Mezcal and Sotol barrels.
Malts: Pilsner, Vienna, Munich, Caramunich, Special B, Chocolate
Hops: Tradition, Hersbrucker, Mittelfruh z
8.4% ABV • 22 IBU

Baltic Porter
This beer was brewed with heavy amounts of Munich malts to create a big bready mouthfeel with dark chocolate, roasted coffee and caramel notes.
These balanced flavors will complement the bold gusto of the Kentucky Bourbon and Tennessee Whiskey barrels.

Andrew Walter
Andrew Walter grew up in North Dakota and started home brewing with his dad at 19. After graduating from the American Brewers Guild, he went on to work at breweries in Colorado, Iowa, Pennsylvania, and now, Arizona.
Andrew is a minimalist when it comes to brewing, knowing that simplicity is always the hardest to execute. For that reason, one of his favorite beers to make is the Pilsner. “It doesn’t have a lot to hide. It’s a very delicate beer. So if there are any off-flavors, it will show in a Pilsner.” You can expect his beers to be classic examples that are true to the style — from a Hazy IPA with citrus and tropical hop aromas to a rich Milk Stout with cocoa undertones.
Andrew brings his passion for the craft and over a decade of brewing experience to The Brewery at Tirrito Farm.
